Muffins, muffins, muffins. I love muffins. You know that by the number of muffin recipes I've posted here at Addicted to Recipes :-)
We are gearing up for back to school, which means I will be back to making muffins each week. I'm already in planning mode, and was reading through some cookbooks and found a recipe for Raspberry Lemon Muffins in my Taste of Home The Complete Guide to Country Cooking, which I modified a bit...here is the recipe:
Blueberry Lemon Muffins
2 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup half-and-half cream
1/2 cup vegetable oil
1 teaspoon freshly grated lemon zest
Juice from 1/2 fresh lemon
2 cups blueberries, washed and dried
Preheat oven to 400F. Prepare muffin cups with paper liners.
Mix together the eggs, half-and-half, oil and lemon zest.
In a second bowl, mix together the flour, sugar, baking powder, and salt.
Add the dry ingredients to the wet ingredients. Gently stir in the blueberries. Fill muffin cups 2/3 full. Bake for 18-20 minutes, or until golden. Remove from oven and cool.
VERDICT:
These were lovely. A nice, light lemon flavour, which is to my liking. I am not usually a big fan of lemon flavour, but maybe it is from all those fake lemon flavourings. There's something about that fresh lemon! My kids loved these, they inhaled them!
