My Mom makes the best cinnamon buns. I don't make cinnamon buns...I've been craving Mom's cinnamon buns, but they've been away. So I had to improvise. Enter Cinnamon Bun Cake, or as our two year old calls it, Cinabun Cake.

Base:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
1/2 cup butter, melted
Topping:
1 cup butter, softened
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
Glaze:
2 cups icing sugar
5 tablespoons milk
1 teaspoon vanilla
Preheat oven to 350F. Prepare a 9 x 13 baking pan (buttered).
Mix all of the base ingredients together, with the exception of the butter. Add the melted butter last, and then pour into your prepared pan,
Mix all of the topping ingredients together in a separate bowl. Mix well. Drop by teaspoonful over the base, as evenly as you can over the entire base. Take a butter knife and swirl the topping into the base. Pop into the oven and bake for 28-30 minutes.
While the cake is baking, prepare the glaze and set aside.
Remove from oven and glaze the cake while still warm.
VERDICT
Well, as I posted on my Facebook page just after I pulled this cake out of the oven at 9:05 pm..."Oh dear...the Cinnamon Bun Cake that I just pulled out of the oven might not make it to morning...if it tastes half as good as it looks, it might be gone by midnight!" Needless to say, I ate two pieces before bed that night. And two more the next day. It's that good. Warm or room temperature. So stinking good. Quite the sweet treat, and a perfect pairing with a cup of coffee or a big ole glass of milk. And all of the ingredients are staples in most kitchens. Wow...this could be dangerous!

Okay. This looks fabulous! I'm pinning this for sure. I am going to make time to go back and try this out. It looks like it would be wonderful served warm with a glass of ice cold milk. Yep, this looks like the people in my house would love this.
ReplyDeleteThat looks really good. I'm bookmarking this for later. I may try freezing it (before glazing) since I like to make a cinnamon cake in a mug (or cinnamon mug), but all that measuring for one serving can be a bit much. Tho you do get a cake in just minutes.

(While I can appreciate people commenting how yummy something looks, it drives me crazy to not see comments about how something turned out for someone who's actually tried the recipe.) Your recipe is the first I decided to bake and review, based on my personal results. So, I baked this today and had rave reviews! Thanks for the recipe! It was really cool how ''craters' were created when the glaze was added to the hot cake. We might try adding pecans to it next time to see how that tastes, too!

DeleteThis recipe is amazing!! Our usual Christmas morning meal is breakfast casserole and cinnamon rolls. I spotted this recipe and thought i would give it a try. So glad I did. Everyone loved it. So easy to make. I can honestly say i don't think i will ever make traditional cinnamon rolls again. Definately a keeper :)

DeleteOkay,first off, I never ever reply. It's just not something I do but I've been compelled by forces of net and sugar to do so today. Okay.. there is only one poster who actually made this cake so for all my fellow posters who replied that this cake "looks so good", I'm here to tell you. . IT IS!! I made it with my goddaughter lat night and we feel in love with this recipe. When us and my boyfriend sat down to eat, you could hear the crickets. It was the most amazing thing. . I had EVERYTHING already in the pantry (no trip to the store which was perfect for our movie day in) and it was soo easy. I'm always on the look out for the "knock your socks off, didn't expect it to be that good, you can bring it to any party and it's gone" kind of dish and this. . Is it!!

ReplyDeleteA friend of mine posted this recipe on Facebook so I tried making it last night. Reall delicious. I like the person's suggestion of adding apples and I might add walnuts next time but it is still good just as is. I did love that I had all the ingredients on hand already. Great with tea or coffee. Oh and I only used about half the glaze as that was plenty.

ReplyDeleteThis is exactly the issue I had. I found the cake less than flavorful, excessively sweet topping and far too much butter and sugar. I'm adding cinnamon and t/4 tsp of cloves to the cake next time, chopping an apple coarsely to mix into the cake and cutting the butter and sugar for the topping by a full cup each. I wouldnt mind a few nuts but I'm concerned about the oil factor, since there was butter floating around. I love sweet buttery desserts but this was too rich for me. Tinker with the recipe until we strike a more personal balance for taste.

ReplyDeleteJust made this, easy to make and tasted delicious. After 30 mins of baking it was still jiggily and raw, put it in for another 5 mins and checked it, still not cooked in the middle. I was afraid the bottom and edges would burn so took it out and cut a piece off the end and the middle uncooked part ran all over. Put it back in the oven again for another 10 mins. Then it was done! Finally. Ice never had an issue with my oven and cook times before so I don't know why this took so long. But it did get the approval from my family. Very sweet though like others had said.
ReplyDeleteMade last night and the cake did not raise. Thinking did something incorrect. When make base last part the butter, do you mix it in with base or just pour on top of and then pour into pan? That was only part not quite sure what to do. Also the topping I might have mixed to much through base. Or maybe baking powder getting old but cake did not raise. Cooked little longer and still no raising. Please clarify if you think I might have done something incorrect. I want to try again.

ReplyDeleteI was about to print this out to make for the second time and saw your comment, wanted to help so you can make it! For me, you just add all the base ingredients except the butter (just as stated). Then when they are all blended, you add the melted butter. Mix well and then pour the batter (including the mixed in butter) into the pan. The butter is blended in well with all the other ingredients-not just poured on top. I think the reason is the eggs. This way the eggs are blended into the mix so that when the melted butter is added to helps them not to be "cooked" from the heat of the butter if still warm. Hope this helps.

Maybe it's because I over cut the topping into the base? I also used margarine, do you think that would make a difference with taste, baking, etc?

ReplyDeleteI love this recipe! It was delicious and easy to make. I used a mixer and melted the butter after mixing the first ingredients and then mixed in the melted butter. I also baked it longer, like maybe a full 35-38 minutes, because I tested it with a toothpick. It didn't burn at all and was perfect. Everyone that tried it said it was delicious also. Made it last nite, it's gone and there's another one in the oven right now. Thank you for a wonderful tasty cinnamon treat.

So was looking for a recipe to make today with ingredients I had in my pantry and I came across this one. Made it exactly the way the recipe stated and it wasn't completely cooked. I had to cook it for 45 minutes to get it done. I took this dish over to a friend's house before testing it myself and they loved it. One of the added whip cream on top of it. I made it as directed, but only added pecans to the top before the glaze. I made it in a pressure oven, and it turned out beautifully---fluffy and and delicious! Am planning to serve this warm, with ice cream to dinner guests next weekend. Thanks for sharing!

ReplyDeleteI made this cake on Saturday and made another one lat night. We all LOVE this cake and I have plenty to share with my elderly neighbors and grandmother, they LOVE it also.
ReplyDeleteI made this cake on Saturday and made another one last night. We LOVE this cake and it's easy to fix. All the ingredients are popular ingredients found in everybody's kitchen. I share the cake with my elderly neighbor and grandmother and the LOVE it too. I have to add that I am going to start using the treadmill in middle room since making this, LOL.
ReplyDeleteLike another poster, mine wasn't done at 30 minutes. I cooked about 45 (was afraid I'd burn it but I didn't!) and it came out perfect. Was a hit!
ReplyDeletei made this last weekend and it was awesome! So much quicker than donuts or rolls. Followed the recipe and it turned out great! Husband said "Every week please". So thank you! This one is a keeper.
