Muffins, muffins, muffins. I love muffins. You know that by the number of muffin recipes I've posted here at Addicted to Recipes :-)
We are gearing up for back to school, which means I will be back to making muffins each week. I'm already in planning mode, and was reading through some cookbooks and found a recipe for Raspberry Lemon Muffins in my Taste of Home The Complete Guide to Country Cooking, which I modified a bit...here is the recipe:
Blueberry Lemon Muffins
2 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup half-and-half cream
1/2 cup vegetable oil
1 teaspoon freshly grated lemon zest
Juice from 1/2 fresh lemon
2 cups blueberries, washed and dried
Preheat oven to 400F. Prepare muffin cups with paper liners.
Mix together the eggs, half-and-half, oil and lemon zest.
In a second bowl, mix together the flour, sugar, baking powder, and salt.
Add the dry ingredients to the wet ingredients. Gently stir in the blueberries. Fill muffin cups 2/3 full. Bake for 18-20 minutes, or until golden. Remove from oven and cool.
VERDICT:
These were lovely. A nice, light lemon flavour, which is to my liking. I am not usually a big fan of lemon flavour, but maybe it is from all those fake lemon flavourings. There's something about that fresh lemon! My kids loved these, they inhaled them!

Blueberry Muffins
Everyone knows that we are a muffin loving family :-) Always willing to try a new muffin recipe, and we usually bake muffins once a week. Recently, my Mother-in-Law gave me a new cookbook to add to my collection, so I've been reading and scoping out new recipes to try. Inside are some new muffin recipes, so of course we are giving them a try. This time around it is Blueberry Muffins! Here is the recipe:
Blueberry Muffins (Source: My Father's Daughter)
1/2 cup butter, melted and cooled
2 eggs
1/2 cup milk
2 cups flour
3/4 cup plus 1 teaspoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups fresh blueberries
Preheat oven to 375F. Prepare muffin tins (I prefer muffin liners).
In a medium-sized bowl, combine the butter, eggs and milk.
In a large bowl, mix together the flour, 3/4 cup of sugar, baking powder and salt. Add the wet ingredients to the dry ingredients, stir just to combine. Add in the blueberries.
Spoon the batter into the muffin tin. Sprinkle the tops of the muffins with the extra teaspoon of sugar. Bake for 23-27 minutes, or until the muffins are golden brown and a toothpick comes out clean.
VERDICT:
These were a hit with my boys. Our oldest gave some enthusiastic thumbs up to these muffins. They reminded me of the Blueberry Buttermilk Breakfast Cake, and got me to thinking that next time I make these, I might add some lemon zest to them. A tasty treat!

Recipe Recap #1
One year ago, I started this amazing ride called Addicted to Recipes. It has been an incredible learning experience, and I have connected with so many people AROUND THE WORLD that I would never have connected with in a million years. This has been so fun! I am pretty sure that my family has enjoyed the ride too, though it is a little funny that they ask first if a photo needs to be taken before we can eat. Joking aside, they have enjoyed the fruits of my labour, and we have found so many new recipes to try.
